The best decision I ever made was to buy my husband a smoker for Christmas. I’ve actually gifted him two now — a Weber Smokey Mountain and a Char-Griller Akorn. We love smoking several pounds of juicy, delectable meat on the weekend to use throughout the following workweek. (I really like that he enjoys it and that I can take a day off from cooking, too!)

What I don’t like, though, is eating the same thing over and over. So I plan my weeknight meals around the meat we smoke but make fun and creative dishes with the leftovers. Having the meat pre-cooked saves a ton of time, and that smoked flavor–YUM!
This leftover brisket pizza is so super simple and a yummy, totally different way to use leftover brisket!

I have made this recipe several times, in both a rectangular pan and a round pan, and with cilantro for the garnish and also scallions. The rectangular pan with cilantro is my favorite way. <3

Leftover Brisket Pizza – BBQ Brisket Pizza
Equipment
- pizza pan
- Pizza Cutter
Ingredients
- 1/2 lb. leftover cooked brisket shredded or chopped
- 14 oz. refrigerated classic pizza crust
- 8 oz. Monterrey jack cheese shredded, separated
- 1/4 medium red onion very thinly sliced
- 1/2 medium green bell pepper seeded, deveined and very thinly sliced
- 1 c. BBQ sauce separated
- small handful chopped fresh cilantro or sliced scallions
Instructions
- Follow instructions on pizza crust for pre-baking.
- Mix 3/4 c. of the BBQ sauce with the shredded or chopped brisket and spread onto the crust. Cover evenly with cheese and arrange the peppers and onions on top . Drizzle with the remaining BBQ sauce.
- Place pizza back in the oven just long enough to melt the cheese.
- Sprinkle with cilantro or scallions, divide into either equal slices, and serve.
