Leftover Brisket Pizza - BBQ Brisket Pizza

This leftover brisket pizza recipe is the perfect way to use your leftover brisket in a new and exciting way! Kick your pizza night up a notch with BBQ sauce, gooey jack cheese and some fresh veggies.

Ingredients

  • 1/2 lb. leftover cooked brisket shredded or chopped
  • 14 oz. refrigerated classic pizza crust
  • 8 oz. Monterrey jack cheese shredded, separated
  • 1/4 medium red onion very thinly sliced
  • 1/2 medium green bell pepper seeded, deveined and very thinly sliced
  • 1 c. BBQ sauce separated
  • small handful chopped fresh cilantro or sliced scallions

Instructions

  • Follow instructions on pizza crust for pre-baking.
  • Mix 3/4 c. of the BBQ sauce with the shredded or chopped brisket and spread onto the crust. Cover evenly with cheese and arrange the peppers and onions on top . Drizzle with the remaining BBQ sauce.
  • Place pizza back in the oven just long enough to melt the cheese.
  • Sprinkle with cilantro or scallions, divide into either equal slices, and serve.
